Curried Egg Salad

Ingredients

  • 1 dozen Hard Boiled Eggs
  • 1/2 cup Greek Yogurt
  • 1/4 cup Small Diced Apple Granny Smith Recommended
  • 1 stalk Celery
  • 1/8 cup Pecans
  • 15 tbsp Curry Powder
  • Salt and Pepper to Taste

Instructions

Hard Boiled Eggs

  • Boil eggs for 9 minutes
  • Let eggs set for 9 minutes
  • Place eggs in ice water to cool and then drain

Egg Salad

  • Combine all ingredients in a large bowl along with diced eggs

Serving Instructions

  • Toast 2 slices of multigrain bread
  • Place 6oz egg salad on bread along with 1 slice of tomato and shredded radicchio
  • Serve with pickle and enjoy!
