Curried Egg Salad
Ingredients
- 1 dozen Hard Boiled Eggs
- 1/2 cup Greek Yogurt
- 1/4 cup Small Diced Apple Granny Smith Recommended
- 1 stalk Celery
- 1/8 cup Pecans
- 15 tbsp Curry Powder
- Salt and Pepper to Taste
Instructions
Hard Boiled Eggs
- Boil eggs for 9 minutes
- Let eggs set for 9 minutes
- Place eggs in ice water to cool and then drain
Egg Salad
- Combine all ingredients in a large bowl along with diced eggs
Serving Instructions
- Toast 2 slices of multigrain bread
- Place 6oz egg salad on bread along with 1 slice of tomato and shredded radicchio
- Serve with pickle and enjoy!
