Curried Egg Salad
Ingredients

Hard Boiled Eggs

Greek Yogurt

Small Diced Apple
Granny Smith Recommended

Salt and Pepper to Taste
Instructions
Hard Boiled Eggs
Boil eggs for 9 minutes
Let eggs set for 9 minutes
Place eggs in ice water to cool and then drain
Egg Salad
Combine all ingredients in a large bowl along with diced eggs
Serving Instructions
Toast 2 slices of multigrain bread
Place 6oz egg salad on bread along with 1 slice of tomato and shredded radicchio
Serve with pickle and enjoy!
