Cauliflower Fritter

Ingredients

Fritter

  • 1 head Caulifower

Fritter Batter

  • 2 cups cups all purpose flour
  • 3 eggs
  • 1 cup corn starch
  • 2 cups cold water

Romesco Sauce

  • 1 lb Roasted Red Pepper
  • 1 lb Roasted Pecans
  • 3 tbsp Olive Oil

Honey Sherry Vinaigrette

  • 1 cup Honey
  • 1 cup Sherry Vinegar
  • 1/4 cup Olive Oil

Instructions

Fritter

  • Chop 1 head of cauliflower into medium sized pieces
  • Roast at 400 for 15 minutes, remove and let cool
  • Take 8 oz of Roasted Cauliflower and cover in tempura batter
  • Fry in oil until golden brown 
  • Season with salt

Fritter Batter

  • Combine all ingredients in large bowl

Honey Sherry Vinaigrette

  • Combine all ingredients in bowl 

Serving Instructions

  • Spoon Romesco Sauce onto plate
  • Pile fritters high on top of sauce
  • Drizzle Honey Sherry on top
